Glutamate

Amino-acidBest with a meal

What is it

Glutamate is the conjugate base of glutamic acid. In the body it is the most abundant excitatory neurotransmitter and a key amino acid intermediate; in food it provides the umami taste.

Umami flavor

Strong Evidence

Glutamate is the basis of umami taste; helps make low-sodium and protein-rich foods more palatable.

How it works

In the central nervous system, glutamate activates AMPA, NMDA, kainate, and metabotropic glutamate receptors, mediating most fast excitatory neurotransmission. Outside the CNS, it is the main energy substrate for enterocytes and a precursor for glutathione. Dietary glutamate is largely consumed by gut cells before reaching the systemic circulation, so MSG or food glutamate does not measurably raise brain glutamate in healthy adults.

Dosage

No supplement dose is standardized. Dietary intake from natural foods and added MSG averages 1-3 g/day; tolerated intakes are much higher.

When and how to take it

Consume as part of food. No specific time of day.

2 commercial forms

Monosodium glutamate (MSG)

Dissociates to sodium and glutamate in the gut.

Free glutamate, added to foods as flavor enhancer.

Natural glutamate in food

Cheese, tomatoes, mushrooms, fermented soy, etc.

Bound in protein or free in aged/fermented foods.

Safety

MSG is GRAS by the FDA. Controlled blinded studies have not consistently confirmed 'MSG symptom complex.' Headache or flushing in sensitive individuals at high doses (>3 g on empty stomach) is reported.

Who should be cautious

Self-reported MSG-sensitive individuals may want to limit large doses on empty stomach. Patients with severe hepatic or renal failure should not amino-acid supplement without guidance.

Interactions

No major drug interactions at dietary intakes.

Frequently asked questions

Is MSG bad for you?

Decades of research and major regulatory reviews have not confirmed harm at typical intakes. Some people report sensitivity at large doses.

Does dietary glutamate cross into the brain?

Not meaningfully in healthy adults. Gut and blood-brain barrier limit passage.
